Cantonese Fried Rice

Lets talk about the easiest and quickest fried rice you can whip up in less than 15 minutes. Cantonese Fried Rice (Riz à la Cantonais) is easily found in France and is often sold in frozen packs or ready-to-eat packs at the supermarkets. As much as it’s easy to buy, it is also easy to cook from scratch! … and the best part? No chopping of vegetables or meats involved.

There’s a top tip to make it extra yummy. Use leftover / chilled cooked rice. Hardened or cold rice makes fried rice the kind of yummy fried rice you eat at Chinese restaurants. It gives you the texture and rice grains without making it mushy and soft.

  • Ham

  • Frozen Peas

  • Cold Cooked Rice

  • 2 egg

Frying eggs

Create a circular dent in the middle of the wok and add a splash of neutral vegetable oil (I used Sunflower Oil)

Crack 2 eggs and let it cook for a minute. Once the eggs are semi-cooked, stir fry with the rice and combine it all.

Ingredients

  • Cooked and chilled jasmine white rice

  • 200 grams frozen peas

  • 250 grams diced ham

  • 2 eggs

Seasoning

  • 2 tbsp Sesame Oil

  • 3 tbsp Vegetable Oil (Sunflower)

  • 2 tbsp Soy Sauce

  • Salt & Pepper to taste

Instructions:

  1. Heat up a wok with vegetable oil and then add in chilled rice, ham and peas

  2. Add in Soy Sauce and garlic powder and stir fry until well combined. It takes approximately 5 minutes

  3. Once frozen peas are well cooked, make a circular dent in the middle of the wok as shown in the photo. Crack in 2 eggs and let it semi-cook without mixing the rice in.

  4. Once the eggs are cooked, continue stir frying for a couple more minutes.

  5. I like my fried rice slightly charred and “crispy” so at the point, I will add some sesame oil and increase the fire and let it cook for another 1-2 minutes.

Voilà, Cantonese Ham & Pea Fried Rice served in 15 minutes. Enjoy : )
