Beef Brisket Noodles

Beef Brisket Noodle Soup is a Chinese dish of slowly braised savoury sweet beef served over thin and flat noodles in a hot rich beef bone broth. Beef Brisket Noodle Soup originated in China and is made out of beef, beef stock, vegetables and rice noodles

  • 2 Thumb Sized Ginger (Sliced)

  • 1 Whole Bulb of Peeled Garlic

  • 3 Shallots Minced Finely

  • 1 Star Anise

  • 1 Cinnamon Stick

  • 20 Grams Rock Sugar

  • 500 Beef Shin (Bourguinon)

  • 3 Tsp Dark Soy Sauce

  • 3 Tsp Light Soy Sauce

  • 3 Tsp Spicy Broad Bean Paste

  • 2 Bay Leaves

  • 2 Stalks Spring Onion (Tied in a knot)

  • 400 Grams Daikon Radish ( French Navet )

  • 1 Litre Water

  • Corn Starch Solution

  1. In a pressure cooker / Dutch Oven, add in all aromatics & sauté until fragrant

  2. Add in 20 grams rock sugar or a handful

  3. Add in Beef Shin

  4. Stir Fry for a few minutes together with dark soy, light soy & broad bean paste, spring onion

  5. Add in daikon radish and pour in water

  6. Finally, add in corn starch to thicken gravy

    Serve with blanched asian vegetables over rice noodles
